Olives do contain fat, but it’s the healthy monounsaturated kind, which has been found to shrink the risk of atherosclerosis and increase good cholesterol. Green olives ( picholine) are a great probotic super food. Try this cured simple olive tapenade recipe. For spreads or a finish to you favorite protein.

Simple Olive Tapenade

INGREDIENTS:

  • 7 oz. jar of pitted kalamata and green picholine olives, drained
  • 1-2 cloves of garlic
  • 2 Tbsp. drained capers
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1/4 cup parsley leaves and basil

Method:

Chop fine to corsely green, black olives, garlic and capers. Chop fine fresh herbs basil, parsley and place in mixing bowl add olive oil and lemon juice mix well and serve when ready.
