1 glutten English muffins split toasted
2 2oz. Sliced pork tenderloin and or Canadian bacon
2 folded over poached egg whites
4oz. kefir milk
1/2 teaspoon saffron
1/2 teaspoon kosher salt
First toast english muffin split place on plate for serving. Bring sauce pot of water to a slow boil adding 1/2 teaspoon vinegar 1/2 teaspoon kosher salt. Separate egg yolks from white adding to water one at a time.
While Grilling pork tenderloin and or Canadian bacon. Once finshed place on toasted English muffins top with folded over egg white and finish with 1oz. per eggs benny with kefir saffron steeped milk reduction.
Saffron Steeped Kefir milk
Bring 4oz. Kefir milk and 1/2 teaspoon saffron to slow boil reduce by half.
