Ingredients: Yield 2

  • 3 hibiscus flowers
    3 cups water

  • ½ cup lemon juice (approx two lemons)

  • ½ teaspoon salt

  • 2 sole fillets.

    Method:

    1. In a medium frying pan, bring all ingredients, except the sole, to a simmer.
    2. Add the sole, cover and continue to simmer until fillets turn opaque, approximately 4-6 minutes depending on the thickness and then remove from the water with a slotted spatula.
